Fermentation occurs in stainless steel with daily cap submersion for extraction of flavor and color. Pair with a hearty stew, wild game, roasted red meats, and cheeses.
Crushed-stone and berry aromas with some blackberry and black-tea character

but the region is best known for Cabernet Sauvignon
in come flavors of citrus skin
with sherry and cloves
