Grand Cru SurchoixGrand Cru Surchoix is an Alpine style, washed rind, raw cow's milk cheese. Handmade in small batches in Wisconsin its recipe is similar to that of the Swiss Le Gruyre. The name "Surchoix" means that this batch of cheese is a cut above the rest. While original wheels are aged 4 months and reserve wheels are aged for at least 6 months, Surchoix wheels are aged for at least 9 months, resulting in this luscious cheese with a creamy paste and crunchy
