Wasenhaus Weissburgunder Magnum 2022 [1.5L]Notes from the winemakers: Pinot Blanc from volcanic soil on the Kaiserstuhl and some loess plots south of Staufen. Direct pressed as whole clusters and fermented in used barrels of different sizes (300 600L). Aged for one year on the full lees in barrel and another half year in stainless steel on its entire lees.

He tends to pick at peak ripeness in contrast to most other producers in the region

so has naturally occurring flor

Once pressed

both the pinot noir and melon were hand harvested and spent 48 hours soaking on skins prior to pressing

but these are not really that young anymore

As delicious as it sounds

in the beginning as a carbonic maceration and afterwards in a classic open vat fermentation with some punchdowns
