Just a week or so into my first wine shop job, a customer returned a bottle of a Pic Saint Loup because it was off. My boss diplomatically sussed out that it was too rustic for their tastes but suggested I try it. I was enthralled with it's slightly feral, rustic charms and it was possibly the

encouraging biodiversity in the vineyard and rigorously managing yields

Grapes are gently pressed and fermented with native yeast in stainless steel

brackish delta of the Guadalquivir River

Mavrodaphne and the hyperlocal Santameriana

There’s also a touch of Refošk

Bruyère & Houillon

The finish is superbly refreshing and pure

“why are there thousands of grapes used in wine but there is the one rye and the one yellow corn etc in American whiskey

but Panagiotis makes it into a less-common dry version

The secret is that it's mostly Chardonnay

and smoky basalt
