Bourgeois-Diaz "3C" Champagne Brut NVFrom the extreme west of Champagne, west of the Marne Departement. Jerome Bourgeois Diaz took over his family's vines in the early 2000s and began making wines from their grapes for the first time they had always sold the fruit to the local cooperative. By 2009 Jerome had begun converting everything to Biodynamic farming. The wines usually only receive a small sulfur addition at pressing, about 25 30ppm total, and none of the wines have dosage.

The nose has just enough funk dancing playfully around the dark berry tones to feel unique without being polarizing

A lighter whisky with lots of character

the fruit and tannins firm up to become more like Nebbiolo

and affordable wines in Oregon

some work and some love

It is a crossing of Chenin Blanc and Gouais Blanc

some for Botrytis

and reminds of grapefruit Ting soda in all the right ways

and for maybe the first time ever

Sour and cloudy

and this vintage is less funky and a little darker

Vinous and expressive
