In 2021 it started to shift and with this wine from 2022 the next transformation is complete
Castel Pujol has a deep history with winemaking
with hedges on the sides and a wild proliferation of vegetation between the vines which is controlled by horse-drawn "griffages" ("scratching" or very shallow plowing)
After fermentation the wine is blended and aged in a used barrel for approximately 18 months before bottling
