Tiago's wines opened my mind to the fact that there is potential for high toned, refreshing wines, you just have to grow the grapes in the right place. 2015 was an easier

tagliatelle with mushrooms in brown butter

and the fruit for this wine is sourced from cool vineyards around lake Vegoritis

and dangerously gulpable

and the grapes go through a four-day cold fermentation before being macerated for a week on their skins
