Previously planted to elm trees (orme in French). Biodynamically farmed, worked by hand and horse. Densely planted at 8,000 vines hectare. Vinified in oak barrels, many of which are made from trees from the forest of Fossoy. No malo, unfined and unfiltered. Aged 20 months in 228L oak barrels. Sur
