Binyamina The Cave 2020 750ml250 Years ago an enormous cave was quarried inside a natural grove in the heart of the Carmel Mountains. The conditions created by the cave's natural features turned it into an ideal wine cellar, and in the 19th Century it was used as such. This top quality wine, a blend of 65% Cabernet Sauvignon, 33% Merlot, and 2% Petit Verdot. The grapes were harvested in the choicest vineyards in the Upper Galilee and underwent meticulous production processes.

The palate is very elegant

while more subtle notes of toffee fudge and cinnamon

tight and compact palate with some creaminess

This French Merlot is fermented normally then matured in oak to fill out the flavour profile prior to dealcoholisation

Two years in American oak have softened the palate

and subtle stone spice

It embodies a dry

accentuated by hints of old gold

without the massive structure and gripping tannins that would require years of additional aging to tame

and raised in one-third new oak

it has a smooth

with lots of orangey bitterness from the bitter oranges
