By 1993, hed earned a Bachelors Degree in Viticulture from Cal Poly, followed by a Masters in Enology from Fresno State in 1997. But what he learned was that theres quite the difference between the natural practices his own grandfather (Lino Martinelli) had employed

sticking with the rural and traditional practices of Balatsouras’ family

with no wine background

with bruised apple

essentially

finishing with some briny complexity and  a little dusting of tannin

in the Sierra Morena mountains of northern Andalucía

then bottled without fining or filtering

The use of S02 is nonexistent

Fermented and aged in steel tank with a year agin on fine lees

in part due to their efforts to stay ahead of the curve of climate change

chamomile tea

but also to the colder climate at the limits of where grapes can ripen in Europe
